Veggie Brochette made from veggies roasted together in the goodness of spices to satiate your cravings. Having veggies in a brochette is not only healthy but also a better option than regular stir fries for a change.
Equipment
- wooden skewers

Ingredients
For the brochette
- Cauliflower
- Mixed Capsicum- red yellow and green
- Tomatoes
- Baby potatoes
- Cottage cheese
- Pineapple
Spices:
- 2 tbsp Olive oil
- Salt to taste
- 1 tbsp harissa/chilli flakes
- 1 tbsp Garlic powder
- 1 tbsp Lemon juice
Instructions
- Cut all brochette items in equal square pieces
- Mix up all spices in a large bowl to emulsify then toss all the veggies to coat well
- Keep aside to marinade for few minutes
- Preheat oven at 200°c
- Pierce veggies on brochette (except for cottage cheese and tomatoes) in the desired sequence
- Place an aluminium foil glazed with olive oil on the baking tray
- Put all brochette on the foil and close the oven
- Roast for nearly 15-20 minutes at the same temperature.
- You can also grill the same.
- Remove as soon as veggies appear soft and a little roasted
- Place cottage cheese and tomatoes in a different brochette and roast for only 2-3 minutes till the sides of cottage cheese start to turn golden.
- Remove all brochette and add up cheese and tomatoes further in each
- Serve hot with dressing of your choice.
