The Goan Chicken & Hummus recipe has an amazing blend of Indian spices put together in Goan style and paired with homemade hummus. Cooks real fast and it goes perfectly with soups or salads, great party snack too.

Ingredients

  • 5-6 chicken fillets cut into pieces

Goan marinade

  • 2 tsp ginger garlic paste
  • 2 tbsp lemon juice
  • 1 black cardamom
  • 2 green cardamoms
  • 4-5 cloves
  • ¼ tsp cinnamon powder
  • 4-5 green chilies
  • 1 cup coriander leaves with stem
  • Salt to taste
  • 1/4 th tsp red chilli powder
  • 1 tsp olive oil
  • 1 tsp Greek yogurt or hung curd

Instructions

For Hummus:

  • 1 cup boiled salted chickpeas
  • 2 tbsp tahini
  • 1 tsp olive oil
  • Salt to taste
  • A pinch of red chilli powder
  • 2-3 tsp lemon juice

For Chicken

  • Grind the marinade ingredients together and marinade the chicken fillets with it. Cover airtight in a box and refrigerate the chicken for 1 hour or overnight for better taste.
  • Once the chicken is marinated well. Heat some olive oil in a pan and when the oil is hot, place the fillet pieces in the pan and cover with all the marinade, place the lid and cover.
  • Let it cook for 5 mins, then flip, cover and cook again for the same time. Check if the fillets are cooked by trying to break them from the middle with the help of a spoon. If it appears flaky and soft, these are done.
  • I keep them on flame for a little more time to get the outer sides a little brown and crispy and then close the heat. While the chicken cooks the marinade will be cooked too and turn dark brown in colour, don’t worry about it as it will taste good that way.
  • Alternatively, you can also place it in a baking dish, (no need to add more oil) for 25-30 mins at 220℃.

For hummus:

  • To make Tahini: dry roast 2 tbsp white sesame on a pan, when it cools down, grind it in a small grinder with the help of some oil, the consistency should be like a paste.
  • Add the boiled chickpeas, tahini, salt and lemon juice in a blender or food processor to make a smooth paste.
  • Pour it in a bowl and sprinkle few drops olive oil and red chili powder over it. I sometimes sprinkle more lemon juice over it to give it a strong flavour. Try that, it tastes amazing.
  • Serve the green chicken and hummus together in a dish, enjoy.
