Ingredients
- 1 ripen mango
- 1 cup rice Thai rice preferred
- 2 cups coconut cream
- butter for greasing
- Sugar to taste
- A pinch of green cardamom powder
Instructions
- Wash the rice with water till complete starch is removed and you see clear water. Soak overnight or about 8-10 hours.
- Steam rice in a butter greased pan with a cup of water and cook well.
- In a separate pan, heat 1 cup coconut cream and save the remaining for serving later.
- Mix the cooked rice one spoon at a time in the coconut cream and stir in one direction till it is mixed well. It should look like a creamy rice pudding.
- Close the heat and cover the pan.
- Now heat the remaining cream in a separate pan and sprinkle a pinch of sugar in it.
- Cut the mango in small square pieces.
- Pour the rice on a serving dish adding mango pieces on the edges, pour the separately prepared cream over the mango and serve hot.
