Homemade Peanut Oat Cookies made under 20 mins. These are low sugar, crispy and taste amazing. I used ground rolled oats to make the cookie dough, which gives crunchy texture and is a good source of heathy fibres. A mix of crunchy peanut butter and some salted butter adds nice flavour in it. It is a versatile and flexible recipe, so you can also replace peanut butter with any other nut butter or make it with simple salted butter and add nuts of your choice later.

Ingredients
- 1/2 cup crunchy peanut butter
- 1/2 cup salted butter
- 1- 1/2 cups coarsely ground rolled oats
- 3 tbsp all purpose flour
- 1 tsp vanilla essence
- 1 tbsp brown sugar (adjust to taste)
- 1 tsp cinnamon powder
- 1/4 tsp baking soda
- 1 egg
Instructions
- preheat oven at 150°c
- Melt both butters in a mixing bowl in microwave at medium heat for 1 min
- Mix the dry ingredients in a separate bowl
- Mix all wet ingredients into melted butter then add dry ingredients and form a stiff yet soft dough
- Cut small balls out of the dough and shape them round
- Line a nonstick foil or parchment paper over the baking tray and place the balls at some distance to each other
- Flatten the balls using a folk making criss cross
- Bake for 20 mins then take out and keep at kitchen counter top, open to let them cool for about 15-20 mins
- Store in a container for 7-8 days
