Homemade Sourdough Veg Pizza will make you forget store brought pizzas for sure as you will certainly prefer this one once you try. I used sourdough discard while making pizza dough and topped it with all purpose red gravy made from scratch along with some veggies and corn.

Ingredients

For Pizza Dough

  • 1/3 cup sourdough starter
  • 1/4 cup warm water
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1/4 tsp instant or active dry yeast
  • 1 tsp olive oil
  • 1 tsp Salt

For Veg Toppings

  • 1/2 cup sweet corn kernels (frozen)
  • 4 tbsp all purpose red gravy (see notes)
  • 1/4 cup chopped capsicum
  • 1/3 cup cottage cheese chunks marinated in lemon juice and salt
  • crushed black pepper
  • chilli flakes
  • 1 tbsp melted butter/oil
  • 1/2 cup Mix of grated cheese (parmesan, mozarella, cheddar)

Instructions

  • In a large mixing bowl, add sourdough starter, warm water, flour, salt, and yeast together to combine, then knead for about 5 minutes using hands
  • Place the dough inside greased bowl, cover and let rise until almost doubled in size, about 2-3 hours at room temperature.
  • Once the dough has risen, knead it on a floured surface. Shape the dough into a medium sized ball.
    Store: If you are not planning to cook at this point of time, you can refrigerate the dough in an airtight container. Just bring back at room temperature 15-20 mins before starting to cook. You can store it up to 3 days.
  • To make pizza right away, flatten the ball into a pizza circle on a pizza stone/baking tray or parchment sheet. Brush dough with olive oil/melted butter and allow it to rest for 15 minutes before baking. Poke it all over with fork.
  • Preheat oven to 215°c without fan.
  • Spread the all purpose red gravy (recipe in notes) or pizza sauce all over, then top with all above or your desired toppings, add half of the cheese mix. Bake for 10-12 minutes.
  • Take it out of the oven and add remaining cheese, then return to the oven and bake for 5-7 more minutes, until the cheese is melted and the edges turn golden brown.
  • Enjoy hot.
