All Purpose Red Gravy

Just one red gravy for everything you ever want to cook. This is my version of an All Purpose Red Gravy, it is great to use as a pizza sauce, makes amazing red sauce for pasta and can be added into almost all Indian veg and non veg curries like paneer, chicken, lamb, kofta etc.
I made this gravy using fibrous vegetables like carrots, celery and beets, because I wanted to add more fibres frequently into my meals. When you eat refined flour, it is good to add as much as fibre to it so that it can pass on and doesn't stick inside our system. Celery adds a wonderful taste so don't skip this one at any cost, while beets add a vibrant colour to the gravy.
I added half a can of chopped tomatoes in it for their flavour and also because I am a bit lazy to later chop and add them ;p You can totally skip tomatoes if you want, the gravy would still taste good. Only it would lack the tangy flavour that tomatoes add on. So lets get started.

Ingredients

  • 3 sticks of celery
  • 3 medium carrots
  • 1 small beetroot (peeled)
  • 1/2 can chopped tomatoes
  • 4 pods garlic
  • 1 tsp crushed black pepper
  • 1 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp sugar
  • 2 tbsp ghee/butter/olive oil
  • salt to taste
  • 1 tsp lemon juice
  • 1/2 tsp dried oregano (optional)

Instructions

  • Wash thoroughly and remove any inedible parts from the vegetables then roughly chop them.
  • Boil 1 1/2 cups of water in a sauce pan add some salt and the chopped vegetables (carrot, celery and beetroot only). Boil until vegetables are soft and can be mashed.
  • Let it cool then blend into a fine puree in a blender
  • Heat some ghee/butter/olive oil in the same saucepan, add garlic and fry till golden
  • Add turmeric, cumin powder and chopped tomatoes, mix well then after a few minutes add the pureed mix. Cover and cook for another 5-7 minutes.
  • Add sugar, oregano, salt to taste and black pepper once the gravy reduces and gets thicker
  • Keep stirring in between and cook until you get desired thickness in gravy, turn off the heat then let it cool.
  • Store in a fridge in an airtight jar for up to 7 days.

Notes

You can replace chopped tomatoes with 2 tbsp of tomato paste or skip tomato entirely, however adding tomato enhances the flavour to a next level. 
If you want your gravy to be much more spicy, add some red chilli powder to it along with spices.
