Barley Kale Stir Fry

Barley Kale Stir Fry is one of the easiest recipes to make. If you are following keto diet, this could be a perfect lunch or dinner. The only pre preparation you need is soaked barley, I usually soak it overnight and then boil later which softens it perfectly for the recipe. This is a good source of necessary fibres and nutrition you need for a balanced diet. You can use any marinated meat chunks to add up protein to it, here I am using soya nuggets to make it vegetarian.

Ingredients

  • 1 cup soya nuggets soaked in water
  • 1 cup boiled, squeezed and chopped kale
  • 3-4 cloves garlic minced
  • 1 cup soaked barley
  • 1 tsp dijon mustard
  • 2 cups stock chicken or vegetable
  • 2 tsp olive oil or ghee
  • 1/2 tsp sichuan pepper
  • 1 tsp red chilli powder
  • 1/4 tsp dried oregano
  • 1 tsp lemon juice
  • Salt to taste

Instructions

  • Boil 2 cups of stock water in a pan, add overnight soaked barley, and let it cook for 5-10 mins until the stock is absorbed and it all becomes thick.
  • Turn off the heat and add dijon mustard, mix it all, then cover to let it steam.
  • Meanwhile heat olive oil in another pan, add garlic and sichuan pepper to fry.
  • As soon as garlic turns golden, add red chilli powder, mix well, then add chopped kale and soya nuggets, some salt then mix again.
  • Cover and cook for 5-7 minutes.
  • Add the cooked barley mixture and mix along well, check for salt, cover and cook for 2-3 mins.
  • Turn off the heat and let it all steam for a while, serve hot.
