Carrot Soup

Consuming Carrot Soup has lots of impressive health benefits as carrot are amazing source of vitamin A which is good for eyes, beta carotene that prevents cancer and anti-aging agent. It is a healthier and lighter choice amongst veggies in every way. Carrot soup is one of our favourite meals for evening, can be consumed as a light dinner option as well.

Equipment

  • saucepan
  • blender

Ingredients

  • 3 cups carrots chopped
  • 4 cloves garlic minced
  • ½ tsp butter/margarine
  • 1 cube/cup chicken/vegetable stock
  • Salt to taste

Instructions

  • Heat butter in a pan, fry minced garlic
  • Let it brown then add carrots, toss and cover
  • Sprinkle some salt and let it cook for some time
  • As soon as the carrot is cooked, switch off the gas and let it cool.
  • Blend it to make a puree, add water if required.
  • Heat some water (about a cup) in a separate pan, drown the stock cube and carrot puree in it
  • Sprinkle some crushed black or white pepper, serve hot.

Notes

You can also include onion and celery in the soup to make it healthier, the taste may vary a little then.
Mix some coconut cream in it for a change.
