Cheesy Herbed Rice Cakes are simple savoury side dish/snacks to make with leftover rice. More flavour than traditional rice cakes, they also compliment with everything.

Equipment

  • non stick pan
  • mixing bowl

Ingredients

  • 2 cups of leftover white rice
  • 1/2 tsp dried mixed herbs (oregano, thyme, parsley, rosemary & basil)
  • 1 tbsp red chilli flakes
  • 1/2 tsp salt
  • 1 tsp crushed black pepper
  • 1 cup grated parmesan
  • 1 cup grated sharp cheddar
  • 1 tbsp olive oil

Instructions

  • Mix and mash all above ingredients in a bowl and mash well, make flat patties and store in fridge.
  • Pan fry with little butter on both sides whenever you like.

Notes

Goes well with soups, salads, stir fried veggies or just as quick snack.
