Cheesy Herbed Rice Cakes are simple savoury side dish/snacks to make with leftover rice. More flavour than traditional rice cakes, they also compliment with everything.
Equipment
- non stick pan
- mixing bowl
Ingredients
- 2 cups of leftover white rice
- 1/2 tsp dried mixed herbs (oregano, thyme, parsley, rosemary & basil)
- 1 tbsp red chilli flakes
- 1/2 tsp salt
- 1 tsp crushed black pepper
- 1 cup grated parmesan
- 1 cup grated sharp cheddar
- 1 tbsp olive oil
Instructions
- Mix and mash all above ingredients in a bowl and mash well, make flat patties and store in fridge.
- Pan fry with little butter on both sides whenever you like.

Goes well with soups, salads, stir fried veggies or just as quick snack.
