Chicken Skewers

Chicken Skewers are a great way to have roasted meat in combination with veggies. Give yourself a barbecue party with these quick-savoury sticks. Chicken is a perfect lean protein and combined with blanched fibrous veggies, it becomes an ideal meal to reduce cravings and overeating.
The marination of chicken with selected spices makes it savoury and flavourful, so the key is to marinate generously with yogurt and spices. I using greek yogurt for its flavour, plain will work just fine too.

Equipment

  • wooden skewers
  • mixing bowl
  • deep container

Ingredients

Marination:

  • 2 Chicken breasts cut into pieces
  • 4 tbsp Greek yogurt
  • 1 tsp Salt & Paprika (each)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil

Veggies:

  • handful of Snow peas
  • 1 handful of cherry tomatoes
  • 1 large russet potato
  • salt to taste
  • crushed black pepper
  • 1 tsp olive oil

Instructions

  • Marinade Chicken with the above spices and yogurt, cover and refrigerate for an hour or more (overnight works best)
  • Blanch the snow peas in boiling water until they turn a little darker (only 2-3 minutes), ensure they do not lose crunch, drain and keep aside.
  • Cut slits across the potato, taking care not to cut all the way through, rub with some oil, salt and pepper.
  • Skewer potato and chicken pieces and roast until cooked, might take about 20-30 minutes on 200°c
  • Just add lemon juice on top, serve along with snow peas and cherry tomatoes and dressings of your choice.
