Creamy Pumpkin Mash

Rich and easy, Creamy Pumpkin Mash is the perfect side on your dinner table. You can also combined the mash with Doritos or crackers for anytime snacks or just have a warm scoop as it is.
I like to use butter nut pumpkin for this mash, but any ripened pumpkin can be used. The use of heavy cream while blending gives the mash a rich texture. You may alternatively use full fat milk as well to make it lighter.
I add parmesan cheese to add salty flavour in it, you can also use sharp cheddar or a little bit of cream cheese too. If not skip the cheese and milk to make it vegan.

Ingredients

  • 1/2 of a small sized pumpkin
  • 2 cloves garlic (minced)
  • 1 tbsp butter
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan
  • Salt and pepper to taste

Instructions

  • Peel and roughly cut pumpkin into cubes
  • Heat butter in a pan and add few drops of olive oil to avoid burning the butter
  • Stir fry garlic for a few seconds then add pumpkin chunks and some salt into the pan, mix well.
  • Cover and cook until pumpkin gets very tender, stirring few times in between you shall be able to mash it with your spoon.
  • Switch off the heat and let the cooked pumpkin cool down for a while.
  • In a blender or food processor, add the cooked pumpkin, heavy cream and grated parmesan, blend until smooth.
  • Serve in a shallow bowl with crushed pepper on top, I also garnish it with a pinch of paprika.
