Easy ‘No bake’ Cookies with one dough and 3 varieties, for your sweet tooth cravings, they are quick and versatile to make in no time as well as healthy to eat. Full of proteins and fibre, without sugar in them. When I have no time to bake but still wanna keep something in the fridge for late night cravings, I make a standard cookie dough from oats and peanut butter and then flavour it with ingredients (nuts and chocolate) of my choice.
The key is to use chunky peanut butter here, so if you don’t want to flavour them with anythings else, these still taste good and will have a nice crunch in every bite. If you are allergic to peanuts, just use any other kind of nut butter like almond butter or just use normal salted butter and add on other toppings.

Ingredients
For the cookie dough
- 1/2 cup honey
- 1 cup chunky peanut butter
- 2 cups instant or rolled oats
- 1/4 tsp vanilla essence
- 1/4 tsp salt
Flavours
- 1/4 cup Grated coconut
- 1/4 cup Roasted cashews
- 1 tsp Cinnamon powder
- 1/4 cup Dark Chocolate chopped (I used Toblerone)
Instructions
- In a grinder or food processor, ground the oats into a coarse powder
- In a separate mixing bowl, add peanut butter and honey, then melt it into the microwave for about 40 seconds at low temperature.
- Now add the vanilla essence and salt and mix together with powdered oats to form a crumbly yet binding dough.
- Divide the cookie dough in three equal parts and add each of the flavour ingredients separately to make three kinds of dough (one with roasted cashews, one with grated coconut and one with cinnamon and chopped dark chocolate)
- Mix well and shape cookies from each of the dough then refrigerate for 30 mins and they are ready to eat.
- You can store these delicious no bake cookies inside fridge for up to 5-7 days
