Easy One Pot Pasta is an amazing recipe that doesn't require any additional effort. Just dump everything in a pot and boil. It is so quick to make and serves as a wonderful lazy dinner.
The below quantity serves two. Use any kind of pasta you like, I am using spaghetti in this. You can also use any kind of leaves you have like fresh basil or spinach or bok choy, don't even need to chop them. Just wash thoroughly and use.
I really like the taste of minced ginger in my pasta bites, it definitely adds a lot of flavour in the water that becomes the pasta sauce after boiling.

Ingredients

  • 200 gms of spaghetti/any pasta
  • 3 cups of water
  • 1 chicken/vegetable stock cube
  • 1 cup chopped tomatoes canned or fresh
  • 2 pods garlic minced
  • 1/2 inch ginger minced
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrot
  • 1 cup fresh bok choy or baby spinach
  • 1 tsp paprika
  • 1 tsp cumin seeds
  • 1/2 tsp dried mixed herbs/oregano
  • 1 tsp crushed black pepper
  • 2 tbsp olive oil
  • salt to taste
  • 1/4 cup grated parmesan cheese

Instructions

  • Heat oil in a deep pan, add cumin seeds then add ginger, garlic and onions and carrots, stir and cook for 2-3 mins.
  • Add rest of the ingredients except the green leaves & cheese. Cover and cook at low flame for 10 mins. Stir once or twice in between.
  • At this point the pasta is half cooked and you’ll see some remaining liquid at the bottom of the pan, now is the time to mix up the leaves into this pot so they remain crunchy and contrasting green.
  • Cover and cook for another 3-5 mins, then switch off the heat.
  • Let it all steam for a while before serving.
  • Top with grated parmesan and crushed pepper to serve. Enjoy hot.
