A quick energy booster Fruit & Oats Pancakes for busier mornings. A delicious way to enjoy breakfast and dessert in one single recipe. Just mash up few bananas, eggs and oats together to get an instant pancake batter. Top with any fruits you like, I had strawberries at the moment, also dark chocolate sauce which is an amazing combination that felt like having a warm sundae for breakfast.

Equipment

  • mixing bowl
  • non stick pan

Ingredients

  • 1 small cup of oats
  • 3 large bananas
  • 1/2 tsp vanilla essence
  • 1 tsp cinnamon powder
  • 2 whole eggs
  • 1/4 cup dried melon seeds/chopped walnuts
  • 1 tbsp butter to grease pan
  • 1/4 cup Dark Chocolate sauce (topping)
  • 1 cup roughly chopped strawberries (topping)

Instructions

  • In a mixing bowl combine oats, mashed bananas, vanilla essence, cinnamon powder and eggs and seeds/walnuts to form a batter.
  • Keep the mix at room temperature for about 15 mins so the oats get soft. (You can also refrigerate this batter overnight in an airtight jar to use next morning, to saves time)
  • Heat a non stick pan over medium flame and grease it with butter.
  • With the help of large spoon or ladle, spread batter in small round yet thick shapes over the pan. You can make 3-4 at once.
  • Flip the pancakes as they solidify and turn brown in color, cover for 2 mins after flipping, this helps them to cook from inside.
  • Serve the pancakes hot with your choice of topping.

Notes
