This Fruity Pea Sprouts Salad is so refreshing and versatile side dish, you can add it with anything and everything. This salad compliments well with all kinds of sandwiches, pastas and wraps, or you can enjoy it just as when following a Keto diet. Just peel and chop a few fruits and you can toss it all under ten minutes. I used little mandarin oranges in this salad to add a perfect tang that contrasts sweetness from other ingredients. A small bunch of fresh pea sprouts sets as base, an avocado contributes some rich and creamy texture whilst blueberries compliment the whole combination in every bite. You can replace any ingredients/fruits/berries and add on some nuts of your choice too.

Ingredients
- 2 cups fresh pea sprouts (chopped)
- 1 ripen avocado, peeled and cubed
- 1 cup fresh blueberries
- 3 small mandarin oranges
- 2 tbsp Thai dressing (see notes for homemade recipe)
- 1/4 tsp harissa powder (or paprika)
- 1/4 tsp lemon juice
- 1/4 cup feta cheese cubes
- pinch of salt
- crushed white and black pepper
Instructions
- Wash and roughly chop pea sprouts and add them to a mixing bowl
- Pour Thai dressing, salt, lemon juice and harissa over the pea sprouts and toss them well
- Add rest of the ingredients and give a light toss before serving. Top with crushed pepper and enjoy.
