Green Soup is made from potato and leek flavoured with healthy ingredients like garlic and pepper. A versatile recipe to make from scratch. You can even add some broccoli florets to make it greener or just on top instead of croutons.

- 2 medium potatoes
- 3 tbsp butter
- 2 large leeks chopped
- 3 pods garlic chopped
- 1 chicken/vegetable stock cube
- 2 bay leaves
- 2 cloves
- salt to taste
- 1/4 tsp crushed black pepper
- 1/2 cup heavy cream
Instructions
- Peel and roughly chop potatoes, soak in saltwater for 5-10 mins.
- Heat butter in a pan and add bay leaves and cloves.
- Add garlic and fry golden.
- Now add chopped leek and potatoes, some salt then stir fry
- Cover the pan and let the ingredients cook in their own steam for 5-10 mins, in low-medium flame
- Keep mixing in between to avoid burning
- Meanwhile, boil 3 cups of water in a separate pan and add stock cube, mix well.
- When potatoes and leeks are done, let them cool down then grind into fine paste in a mixer. Add some ladles of prepared if required.
- Mix the paste with remaining stock and let it boil for 2-3 mins.
- Check for salt and add crushed pepper and heavy cream, mix again.
- Turn off the heat and serve hot.
