Green Soup is made from potato and leek flavoured with healthy ingredients like garlic and pepper. A versatile recipe to make from scratch. You can even add some broccoli florets to make it greener or just on top instead of croutons.

Ingredients

  • 2 medium potatoes
  • 3 tbsp butter
  • 2 large leeks chopped
  • 3 pods garlic chopped
  • 1 chicken/vegetable stock cube
  • 2 bay leaves
  • 2 cloves
  • salt to taste
  • 1/4 tsp crushed black pepper
  • 1/2 cup heavy cream

Instructions

  • Peel and roughly chop potatoes, soak in saltwater for 5-10 mins.
  • Heat butter in a pan and add bay leaves and cloves.
  • Add garlic and fry golden.
  • Now add chopped leek and potatoes, some salt then stir fry
  • Cover the pan and let the ingredients cook in their own steam for 5-10 mins, in low-medium flame
  • Keep mixing in between to avoid burning
  • Meanwhile, boil 3 cups of water in a separate pan and add stock cube, mix well.
  • When potatoes and leeks are done, let them cool down then grind into fine paste in a mixer.  Add some ladles of prepared if required.
  • Mix the paste with remaining stock and let it boil for 2-3 mins.
  • Check for salt and add crushed pepper and heavy cream, mix again.
  • Turn off the heat and serve hot.
