Healthy Couscous Salad can be quickly tossed, you only need some soaked and boiled ingredients and its done. I am using red beans (soaked overnight) and parsley here, which complements with couscous pasta. It is a good lunch or dinner meal option.

Ingredients

  • 1 cup small red beans
  • 2 cups couscous pasta
  • 1 tbsp olive oil
  • 1 large tomato finely chopped
  • 1 medium onion finely chopped
  • 1/2 cup fresh parsley finely chopped
  • 2-3 tsp lemon juice
  • salt to taste
  • 1 tsp crushed black pepper

Instructions

  • Soak the red beans overnight or for 4 hrs then boil them in salt water until soft, drain and keep aside.
  • Boil couscous in about 1-1/2  cup water with some salt for 8-10 mins until soft, drain access water.
  • Add olive oil in boiled cuscus, mix well, a little excess water is ok, the pasta will soak it all.
  • Now mix rest of the ingredients and sprinkle black pepper and lemon juice. Serve hot or cold as you like.

Notes

Try not to over boil cuscus by paying constant attention, avoid stirring it a lot.
