Healthy Kale Soup along with chunks of roasted chicken and sweet potato serves as an ideal meal for dinner. One bowl is great source of protein, fibre and antioxidants. Due to water content it hydrates you well, light on appetite and keeps you feeling full for longer.

Ingredients
- 1 cup boiled kale
- 2-4 chicken fillets
- 2 purple sweet potato
- 2 cloves garlic
- 1/2 tsp crushed black pepper
- salt to taste
- 1 tsp butter or olive oil
- 1 cube of chicken stock
- 1/2 litre water
Marinade chicken fillets with the below spices and roast at 200°c for 20 mins in an oven.
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt to taste
Instructions
- Prepare the boiled kale leaves by tightly squeezing and finely chopping them.
- Roughly chop sweet potatoes and garlic
- Boil water with a stock cube in a separate pan.
- Heat butter/olive oil in a saucepan and fry garlic until brown.
- Add kale and sweet potato chunks, sprinkle salt and cook for 5-8 mins until potatoes get soft.
- Now add stock and let it boil for a minute or two.
- Serve in a soup bowl, topped with roasted chicken pieces and crushed black pepper.
