A recipe for perfect Sunday dinner, Herb Roasted Chicken combined with Apple kale salad and garlic mashed potatoes. It is one healthy low carb and fibre rich meal you won’t forget for a long time. The key is to use fresh ingredients and maintain timing so you can have everything warm.

Ingredients
For Herb Roasted Chicken
- 3-4 chicken drumsticks
- 3-4 tsp lemon juice
- 3-4 pods large garlic grated
- salt to taste
- 2 tbsp melted butter
- 1 tsp olive oil
- 1 tsp mixed dried herbs rosemary, oregano, parsley, sage etc
- 1 tsp red chilli powder
- 2 tbsp thick hung curd
For Apple Kale Salad
- 1 large fuji apple finely chopped
- 1 cup boiled kale
- 1 tsp olive oil
- 1/2 cup chopped almonds/cashews/walnuts
- 1 tsp lemon juice
- salt to taste
- 1 tsp crushed black pepper
For Garlic Mashed Potatoes
- 2-3 large russet potatoes
- 1 tsp salt
- 2 tsp butter
- 1/2 tsp paprika
- 1/4 tsp dried parsley
- 2 cloves garlic
- 1/2 cup milk
- 1/2 cup parmesan cheese grated
Instructions
For Herbed Chicken:
- Marinate the chicken drumsticks with all above ingredients along with curd, oil and butter.
- Refrigerate overnight or for 1 hour.
- Preheat oven at 200°c and roast the drumsticks over non stick sheet for 25-30 mins.
For Apple Kale Salad:
- Finely chop the boiled kale and garlic clove
- Heat olive oil in a non stick pan.
- Fry garlic until golden then add kale and stir fry for 3-4 mins
- Add salt and pepper, cook for another minute then turn off the heat
- Now add lemon juice, almonds/cashews/walnuts and apple in the pan and give it a good toss.
- You can serve this salad slightly warm or cold.
For Garlic Mashed Potatoes:
- Boil water in a deep container, add salt
- Peel and roughly chop potatoes into medium sized chunks and add into boiling water.
- Cover and cook for 10-12 mins until potatoes are soft. Try mashing with a fork to check.
- Drain potatoes in a mixing bowl.
- Add milk, a pinch of salt(if required), paprika and grated parmesan cheese, mix well using a beater until smooth.
- In a small pan, heat butter, paprika, and minced garlic, fry for a minute until garlic chunks are browned and the butter turns red.
- Add parsley in this fried butter, garlic mixture or sprinkle above.
- At this point you can either pour this butter garlic mixture into mashed potatoes to mix or else keep it aside to top over the mashed potatoes while serving.
- Combine all above dishes to make a meal and enjoy.
