Mango Chia Pancakes are the best version of pancake breakfast you will ever try. The recipe is quick, easy and yummy. You can always get creative with the toppings you choose, I like to have more than one toppings for variety. For pancake batter, I am using bananas mashed with oats (see recipe notes) as it has more fibre content. You can also make these with usual flour batter. Even toppings can be of mixed fruits as many as you like. I prefer more volume of fruit toppings on a single pancake, just a way to eat more fruits in the morning.I love this version of toppings and you will know why when you try it yourself. So, here we go.

- flat non stick pan/griddle
Ingredients
- 1 large mango
- 1 cup coconut cream
- 2 tsp chia seeds
- 1/2 cup pumpkin and melon seeds mixed
- Chocolate sauce or syrup
Instructions
- Soak chia seeds in in some water for 5-7 mins and keep aside.
- Peel and cut mango into quarter sized chunks
- In a medium bowl, mix coconut cream, chia seeds and mango chunks together and toss a little to mix, ensure mango doesn’t gets mushy.
- Make pancakes as per this recipe.
- To serve, arrange pancakes in a flat plate and top with the mango-chia topping, sprinkle chocolate sauce then pumpkin and melon seeds above and enjoy.
