Meatballs in Mushroom Sauce, a savoury, juicy, creamy yet spicy mushroom sauce topped over chicken meatballs. This rich white mushroom sauce can be your ideal holiday dinner recipe. It is delicious and easy to make in about 30 minutes, perfect for dinner with salad, rice, noodles or pasta.

Equipment

Ingredients

For Meatballs:

  • 300 gm minced chicken
  • 1 tsp dried oregano
  • 1 tsp Paprika
  • 3 cloves minced garlic
  • ¼ cup grated parmesan
  • 1 tsp soya sauce
  • 1 tbsp lemon juice
  • Salt to taste
  • 2 tbsp Olive Oil

For the Sauce:

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic minced
  • ½ cup chopped onions
  • 1 cup finely chopped mushrooms
  • 2 tbsp all purpose flour
  • 1 chicken/veg stock cube
  • 1/3 cup water
  • 1 tsp dried mixed herbs
  • ½ teaspoon Paprika
  • Salt and Pepper to taste
  • ½ cup heavy cream

Instructions

Making meatballs:

  • In a large bowl, mix together all the ingredients and keep inside refrigerator to marinade for 1 hour.
  • After an hour, form the mixture into 10-12 meatballs. Set aside.
  • Heat olive oil in a pan and cook meatballs on medium heat, flip and move to cook all sides golden. Keep aside on a plate.

Making Sauce:

  • Heat two tablespoons olive oil and a tablespoon of butter in the same pan.
  • Add garlic and onions. Cook till the onions become translucent.
  • Add the mushrooms and cook for another 2-3 minutes. Stir in the flour and cook for another minute to get rid of the raw flour flavour.
  • Slowly add the chicken broth and keep whisking continuously till the sauce thickens.
  • Stir in dried herbs, paprika, salt, pepper and meatballs. Add a little more stock or water if the sauce is too thick. Simmer the meatballs for ten minutes.
  • Stir in the heavy cream and put off the flame. Serve hot.

Notes

To chop the mushrooms finely, just cut them in half and add them to a food processor/chopper. This will coarsely chop the mushrooms quickly. 
You can replace heavy cream with coconut cream for a healthier and lighter version.
