Mix Veg Soup is one of my mom’s best recipes I learnt and still cannot get enough of it. This soup is the healthiest way of including fibrous vegetables and goodness of spices in your meal.
Cumin seeds give it an aromatic flavour and a small amount of turmeric boosts immunity. It is easy to make in two steps, with very simple ingredients. I hope you enjoy it.
Equipment
- pressure cooker/rice cooker
- blender
Ingredients
- 2-3 small florets of Cauliflower
- 3 to matoes
- 1 inch ginger
- 2 pods garlic
- 1 carrot
- 1 stick celery
- 2 large cups of water
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 5-6 white pepper n black pepper
- Salt
- 1/2 tsp ghee
Instructions
- Boil all the above ingredients with water in a pressure or rice cooker for 15 mins.
- Let it cool then grind well, filter the roughage. You can also have it without filtering as roughage is good fibre.
- Sprinkle the crushed pepper and serve hot. Add extra ghee and croutons on top if you want.
Notes
The leftover roughage can be used later in any gravy for thickness, I also use the roughage adding coriander and green chilies with some salt to make a green chutney. Try it.
