These soft pan fried Mutton Galauti Kebabs melt in your mouth and are unbelievably delicious. A world renowned delicacy from Lucknow, India is easiest to make at home.
Equipment

Ingredients
Grind together:
- 1/2 cup raw papaya cubes
- 1 inch ginger
- 4 cloves Garlic
- 4 Cloves
- 2 black cardamom seeds
- 1 tsp Cinnamon powder
- 2 Green cardamoms
- 1 tbsp red chilli powder
- 1/4 tsp Nutmeg powder
- 1 tbsp Dry pomegranate seeds (ground coarsely)
- 1 tsp turmeric powder
- Salt to taste
For kebab mixture
- 250 grams of minced mutton
- 1/4 Cup Coriander leaves finely chopped
- 2 green chillies finely chopped
- 3-4 tbsp roasted gram flour (keep some extra handy)
- 2 tbsp Ghee for pan frying kebabs
- half lemon’s juice
For the side & onion salsa
- 1 large Onion (long thin slices, mix with lemon juice, salt, paprika and coriander leaves)
- 1-2 lemon wedges
Instructions
- Mix the minced meat, all kebab ingredients along with the ground ingredients and massage/knead the whole mixture with clean hands for about 5-7 mins. This step is most important to get flavours of all spices blend in well. Keep aside for 15 mins.
- Form small patties flat in shape, if you feel the mixture is wet then add some more roasted gram flour to help binding.
- Heat ghee in a flat non stick pan and place patties, fry till they get brown on both sides, try not to flip the patties again and gain as these might break because they are very soft.
- Garnish with coriander leaves, serve with onion salsa and lemon wedge. I usually make some green chutney(see notes) with these as it compliments with the kebabs very well.
