Prawn Pasta is mildly flavoured delicacy for cheat days. The taste and aroma of garlic and butter stir fried prawns is to die for when topped over herbed macaroni pasta.
Equipment
- deep pan
Ingredients
- 8-9 Fresh Prawns small
- 2 tbsp lemon juice
- 2 cups macaroni pasta
- 1 tbsp olive oil
- 1 cup bell pepper chopped
- 2 tbsp Butter
- 4 cloves of garlic minced
- 1/2 tsp dried mixed herbs
- 1/2 tsp crushed black pepper
- Salt to taste
Instructions
- Marinade prawns with lemon juice and some salt for 1 hour.
- Boil 4 cups of water in a deep dish. Add olive oil, 1 tsp salt, pasta and cook for 10 mins.
- I usually let the pasta soak for 5 mins before draining which makes it softer and it doesn’t get chewy. Make sure you don’t over-soak.
- Meanwhile heat butter in a non stick pan, let it brown a little then saute garlic and prawns in it. Cook prawns for 10 mins until they get golden and soft.
- Add bell peppers and cover the lid to let it cook for about 2 mins.
- Sprinkle mixed herbs and add boiled pasta into pan. Check for salt and add more if required.
- Mix well and cook for 2-3 mins then turn off heat and let it steam. Serve hot topped with crushed black pepper.
Notes
Adding oil in boiling water prevents pasta from sticking.
Marinating prawns into lemon juice enhances the taste.
