Mushroom Basil Stir Fry made from scratch of vegetables available at the moment, turned out to be so good that now its a regular dinner often. Its lazy, light and simple recipe that can be complimented with light soups or salads.
I used sichuan pepper to slightly spice it and a sprinkle of lemon juice to add up to the flavour. Feel free to make your own version with your choice of vegetables available, I am sure it will always turn out good.

Ingredients

  • 10-12 shiitake mushrooms cut in half
  • 1 cup of fresh basil chopped
  • 2 medium size potatoes cut in cubes
  • 4 cloves garlic minced
  • 1 medium onion chopped
  • 2 tbsp olive oil
  • 2 tsp sichuan pepper
  • 1/2 tsp mixed herbs dried
  • Salt to taste
  • 1 tbsp Lemon juice

Instructions

  • Heat oil in a pan and let sichuan pepper crackle.
  • Add garlic, onion and let brown a little, then add mixed herbs
  • Add potatoes, sprinkle salt, mix and cover for 5 mins.
  • When potatoes are half cooked, add mushrooms and basil, sprinkle more salt to balance the taste, mix all, cover and cook for about 5-7 minutes.
  • At this point the mushrooms shrink and extract moisture, so mix again and let it steam for few 5 more minutes until dried up.
  • Remove from heat and sprinkle lemon juice before serving.
