Quinoa Sticky Ball is my version of Cheesy and flavourful Quinoa made from scratch. I used some leftover vegetables, rajma beans and lots of cheese to finally make it sticky. It came out really great as a dinner option, it goes well with any light soup.

Ingredients

  • 2 cups boiled quinoa mixed red & white
  • 1 cup chopped capsicum red, yellow & green
  • 1 inch minced ginger
  • 2 pods minced garlic cloves
  • 2 green chillies minced
  • 1 cup boiled rajma beans
  • 1 cup corn
  • 1 cup chopped red onion
  • 1 chopped tomato
  • 1 sachet of Maggi masala
  • 2 cheddar cheese cubes
  • 1/2 cup grated parmesan cheese
  • 3 tsp coconut/olive oil
  • 1 tsp cumin seeds
  • Salt to taste
  • 1 tsp red paprika

Instructions

  • Heat some oil in a non stick pan and saute cumin seeds with minced ginger, garlic and green chillies.
  • Add onions and saute for 2-3 mins.
  • Now add capsicum, corn, beans and tomato, sprinkle some salt, paprika and cover, let it cook for 4-5 mins.
  • Once done, sprinkle maggi masala over mixture and mix boiled quinoa together well.
  • Cover and cook the mixture for 5 mins on low heat, then add both cheeses, mix a little and turn off the heat.
  • Cover and let steam for a while as the cheeses melts in between.
  • Serve hot and enjoy.
