Quinoa Sweet Potato Mash, The bowl of goodness is one of the dishes I make when I crave for something warm and sweet. As sweet potatoes are a healthier choice, adding quinoa and some dry fruits transforms it into a crunchy bite.
We never hesitate to have it for dinner, in fact it serves as a lighter yet filling option to enjoy variety. I use coconut cream to get a rich texture, which also creates more flavour.

Ingredients
- 1 cup boiled and drained quinoa
- 2-3 sweet potatoes boiled and mashed
- 1 tbsp ghee or butter
- 1 cup chopped cashews, pistachio, almond flakes, walnuts and raisins
- 1 cup coconut cream
- pinch of salt and pepper
Instructions
- Heat ghee/butter in a pan, caramelise dry fruits and sprinkle a pinch of salt and pepper, keep aside.
- Add quinoa in the pan with remaining butter and stir well for about 5 mins until extra water is gone.
- Add mashed sweet potato, mix well, let it cook for few 5 minutes.
- Add coconut cream, stir and cook for a while, cover and let it steam.
- Now close the heat and garnish with dry fruits on top, you can also add more coconut cream over if you like.
Notes
You may either refrigerate or have it warm, it tastes good both ways. Ghee tastes better in this recipe.
