Red Wine Chicken is a savoury lunch/dinner meal is a combination of vegetables with pan roasted chicken cooked in enhanced red wine. The use of red wine retains the moisture in chicken and also adds a good flavour to the whole experience of dish.

Ingredients
- 4-5 chicken fillets
- 1/2 cup red wine
- 2 tbsp olive oil
- 1 tsp cumin seeds
- 2-3 garlic cloves minced1 inch ginger (minced)
- 2 green chillies minced
- Salt and pepper to taste
- 2 tsp lemon juice
- 1/2 cup spring onions minced
- 1/2 cup Shredded mozzarella cheese
- 1 large onion minced
Instructions
- Marinate chicken fillets with some salt and lemon juice and refrigerate for about and hour.
- Heat oil in a nonstick pan and add cumin seeds.
- Saute garlic, ginger, green chillies for a minute then add onions and saute till it becomes transparent.
- Add little salt over it and mix.
- Add chicken fillets and cover for about 5 mins, keep the flame medium.
- Check and keep flipping the fillets until golden brown.
- The fillets start loosing moisture by this time so pour wine all over the fillets and cover till the wine gets soaked. The wine loses its odour and it will gain a semi gravy texture.
- Check if the chicken is cooked, you shall be able to break fillets easily with stirring spoon.
- Turn off the heat and let steam for a while then top with spring onions, lemon juice, cheese and serve with stir fried vegetables or rice of your choice.
Notes
An overnight marination of chicken works great for this recipe.
