Sourdough Ham & Cheese Scones are a way to go when you need something quick and don't wish to spend a long time in the kitchen. These savoury scones are so versatile, you can eat them for breakfast with a juice/smoothie or just have them as snacks, or eat them at dinner with soup and salads. They go well with anything and everything. You can also replace ham with bacon, or just skip it to make them vegan, these would still taste good. I had some sourdough discard with me so I used it into this recipe for flavour, no worries if you don't have one. See notes for a sourdough starter guide.

Ingredients
- 2 cups All purpose flour
- 3/4 cup buttermilk (see notes)
- 2 slices of chicken ham (cut into small squares)
- 1 cup grated sharp cheddar cheese
- 1 cup leek (little of both green and white part finely chopped)
- 6 tbsp metled butter
- 1 tsp salt
- 2 tbsp sourdough starter discard (optional)
- 1 tbsp Crushed black & white pepper
- 1/2 tsp dried oregano
- A pinch of baking soda
Instructions
- Preheat oven at 200°c, without fan.
- Mix salt and baking soda into flour in a mixing bowl, then add melted butter and combine thoroughly until the mix binds together in your palm. Add more butter if you need.
- Add minced ham, leek, grated cheese, sourdough discard, oregano and peppers into this flour and combine well.
- Spare some buttermilk to brush over later.
- Now slowly add buttermilk in small quantities each time to form a soft dough. Use your hands to mix. It’s ok if the dough is a little bit sticky. Over all you should be able to handle it with your hands.
- Knead it for a few seconds to get a round shape, don’t overdo the kneading.
- Place the dough on a flat surface, use a rolling pin to flatten it until it is 1-2 cm thick.
- Cut into triangles using a knife or cutter.
- Lower the oven temperature to 180°c with fan and line a baking sheet.
- Transfer the scone triangles on to the baking sheet, brush with remaining buttermilk on top, add some grated cheese and bake for 20 mins.
- Enjoy warm with soup or just like a snack/appetiser.
Notes
Make your own buttermilk at home by adding 1 tbsp lemon juice in a cup of milk, stir and let it sit for 5 mins. Then it is ready to use.
