Spinach Banana Patties are a combination of good nutritious vegetables. A keto diet recipe rich in fibres and proteins is very healthy and light on stomach. You can quickly make these patties and have them for lunch or dinner combining along with soups or salads. They are also great evening snacks to have with green or red chutneys.

Equipment

  • non stick pan
  • mixing bowl

Ingredients

  • 1 cup spinach leaves boiled and chopped
  • 2 raw bananas boiled and grated/mashed
  • 2 small potatoes boiled, peeled and mashed
  • 1 cup cottage cheese grated
  • 1 small onion finely chopped
  • 2-3 green chillies finely chopped
  • 1 tsp red chilli powder
  • Salt to taste
  • 1/2 tsp dried mango powder
  • 1 tsp cumin powder
  • 3 tsp olive oil or ghee for pan frying

Instructions

  • Mix all above ingredients in a large mixing bowl and form patties.
  • Heat oil/ghee in a non stick pan and cook both sides till golden brown.
  • Serve hot.

Notes

You can keep patties in refrigerator for few minutes before pan frying them, this will help avoid breakage while cooking.
