Thai Chicken Salad with flavourful and quick homemade Thai dressing. The recipe has a balance of tropical flavours tossed together.

Ingredients

  • 200 gm chicken breast
  • 2 cups shredded lettuce of your choice
  • 10-15 cherry tomatoes
  • 1 small red onion (thinly sliced)
  • 4 tbsp Thai salad dressing
  • 1/2 cup feta cheese cubes optional
  • Salt and pepper
  • 1/2 tsp red paprika powder
  • 1 tsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp roasted pumpkin seeds

Instructions

  • Wash and boil the chicken breast in about 2 cups of water adding salt and 1 tsp of olive oil for about 20 mins.
  • Tear and shred the chicken into small pieces using hands.
  • Sprinkle some salt and squeeze some lemon juice over shredded chicken, mix and keep aside.
  • Meanwhile tear lettuce, cut tomatoes and feta into small chunks.
  • Take a large bowl and toss all above ingredients along with Thai dressing and give it a good mix.
  • Enjoy with soups or main course meals.
