Thai Chicken Salad with flavourful and quick homemade Thai dressing. The recipe has a balance of tropical flavours tossed together.

Ingredients
- 200 gm chicken breast
- 2 cups shredded lettuce of your choice
- 10-15 cherry tomatoes
- 1 small red onion (thinly sliced)
- 4 tbsp Thai salad dressing
- 1/2 cup feta cheese cubes optional
- Salt and pepper
- 1/2 tsp red paprika powder
- 1 tsp olive oil
- 1 tbsp lemon juice
- 1 tbsp roasted pumpkin seeds
Instructions
- Wash and boil the chicken breast in about 2 cups of water adding salt and 1 tsp of olive oil for about 20 mins.
- Tear and shred the chicken into small pieces using hands.
- Sprinkle some salt and squeeze some lemon juice over shredded chicken, mix and keep aside.
- Meanwhile tear lettuce, cut tomatoes and feta into small chunks.
- Take a large bowl and toss all above ingredients along with Thai dressing and give it a good mix.
- Enjoy with soups or main course meals.
