One of the most amazing combination of fish and rice is this Tuna Fried Rice, especially in a fusion with Mexican flavours, a perfect blend of soft and crisp ingredients, all in one plate can really surprise your taste buds. I am using SW's canned tuna that is low in mercury and stored as flakes in fresh water. This is a healthy version of tuna to use for such recipes and also it is easier to soak up flavours we add on while cooking. The fish already contains salt and hence, always check before you add any salt in it. You can also use just any rice for this recipe, I used parboiled here. Don't forget a bag of Doritos and some homemade guacamole to top up the whole dish with crisp and balance of flavours. Let's get started.

Ingredients
- 1 cup parboiled rice (cooked)
- 1 tbsp olive oil
- 1 cup canned tuna flakes in water
- 1 tsp cumin seeds
- 1/2 cup red onion (thinly sliced)
- 2-3 pods garlic chopped
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tbsp light soya sauce
- salt to taste

- red chilli sauce
- Nachos/Doritos
- Pickled Jalapeños
Instructions
- Heat oil in the pan and saute cumin seeds, garlic and onions until translucent
- Add turmeric and chilli powder, stir for a few seconds then add tuna flakes
- Now add the cooked rice and soya sauce, some salt and mix well until combined.
- Top with mayonnaise, chilli sauce, guacamole, pickled jalapenos and nachos to serve. Enjoy warm.
