Veg Lo Mein in a healthy version, low calories, made with fresh ingredients. A flavourful yet quick recipe for lunch or dinner.

Ingredients
- 250 gm Japanese noodles lo mein
- 1 tsp white pepper
- 3 tsp olive oil
- 2 tsp ketchup
- 2 tsp chilli sauce
- 1/2 tsp maggi masala
- Salt to taste
Mix in a small bowl
- 2 tsp dark soya sauce
- 2 tsp light soya sauce
- 1 tsp red wine
- 1/4 tsp sugar
Chopped Vegetables
- 1 onion
- 1 carrot
- 3 green chillies
- 1/2 capsicum
- 1/2 cup cauliflower florets
- 1 cup bok choy
- 4 cloves garlic
- 1 inch ginger
Instructions
- Boil Lo Mein noodles in saltwater for 5-7 minutes. Then turn off heat, drain half of the water, cover and let the noodles soak up rest of the water.
- Heat olive oil in a pan, add ginger, garlic and green chillies, stir fry for a minute.
- Add onions and fry till transparent.
- Add all chopped vegetables, some salt and stir fry for 3-4 minutes, avoid overcooking. The vegetables shall be tender crisp only.
- Pour the sauces and red wine mixture over vegetables, add noodles and mix well.
- Cover for a minute or two, then add ketchup and chilli sauce and Maggi masala, mix again.
- Turn off heat and cover to let it steam, top with crushed white pepper and serve hot. Enjoy.
