Zucchini Fritters are made from a combination of grated Zucchini and Sattu (powder made from pulses) along with some spices. These are freshly baked in oven with minimum oil in it. A healthy, tasty and a perfect low carb meal. I am using Sattu as binding agent for the fritters as it is light on stomach and has many health benefits. Sattu is a made from dry roasted ingredients like millets, barley, chickpea, cashews and almonds all grounded into a fine flour. It contains important minerals, iron and soluble fibres, which improves bowel movement. Sattu also has detoxifying properties. Consuming it regularly protects from several health problems.

Ingredients
- 2 large Zucchini
- 2 cups of sattu flour
- 1 large green chilli
- 2 tbsp tahini
- Salt to taste
- 1 tsp red chilli powder
- 2-3 tbsp oil
Instructions
- Preheat oven at 200°c
- Meanwhile. wash and grate zucchini and squeeze a little water from it, keep the zucchini water aside to use in the mixture later.
- In a mixing bowl, add grated zucchini with sattu, and all above ingredients along with oil.
- Mix well to form a soft sticky dough, use the zucchini water if required.
- Place a non stick sheet on the oven tray and drop even sized patties/fritters of the mixture using scoop spoon, you don't need to shape them.
- Brush on top with a little oil to lock moisture.
- Cook at same temperature for 30 mins, or as soon as they turn a little golden brownish on edges.
- Serve with soups, salads, sauces etc.
Notes
If you can’t find Sattu, you can alternatively use, blended (boiled) quinoa, oats flour or even chickpea flour to make these.
